Ingredients:
3 Cups Cashews
3 Cups Almonds
2 Cups Walnuts
1 Cup Sugar
2 Tablespoons Butter
1/2 Cup water
2 Teaspoons Pink Himalayan Salt – or good quality salt
1 Teaspoon White Pepper
1 Teaspoon Cayenne Pepper
Method:
- Preheat the over to 350 F (175 C).
- Then line two baking sheets with baking paper.
- In a large mixing bowl, combine the nuts and add the pink Himalayan Salt, white pepper and cayenne pepper.
- In a saucepan on medium heat, combine the sugar, water and butter. Heat through and cook for around 1 minute without boiling.
- Pour the heated sugar mixture into the bowl of nuts and stir gently to coat the nuts and mix through the salt and peppers.
- Next, transfer the nut mixture to the prepared baking sheets. Aim to spread the nuts out into a single layer.
- In the preheated oven, bake the nuts for 8 minutes before removing them to give them a stir. Ensure the nuts are well coated with the sweet and spicy syrup. Then transfer the baking sheets back into the oven for a further 8 minutes, or until the nuts are sticky and well roasted.
- Once the nuts have cooled, separate the nuts with a spoon or clean hands. The spicy sugar coating will harden once completely cooled.
